Chocolate and Valentine’s Day go hand in hand, but most store bought chocolate has processed sugar and other preservatives, which definitely don’t make me feel loved. That’s why I love my homemade chocolate, because there is no preservatives, its loaded with super foods, and it has no processed sugar. So with Valentine’s day just around the corner, I decided to spice up my recipe and make it more romantic. For this batch I added organic freeze dried strawberries because hello…chocolate covered strawberries! I mean really, what can get more romantic than that. I also added some organic food grade rose petals because not only does it look really pretty but roses are associated with love and beauty, aid in digestion, and have a calming and uplifting effect. Let me tell you, not only does this chocolate look romantic, but it tastes amazing. It is the perfect treat to share with loved ones or to make for yourself to show that you love yourself.
1 cup organic cacao butter
1/2-3/4 cups organic chocolate paste
1 cup organic cacao
1/4 or a little less of Lakanto monk fruit sweetener (see notes for substitutions)
1 tablespoon organic coconut oil
2 tablespoon organic maca powder
1 teaspoon organic kelp powder
1 teaspoon vanilla extract
1/2 cup freeze dried strawberries plus more for topping
1/4 cup goji berries
Organic food grade rose buds for topping
-Melt the cacao butter and the chocolate paste in a saucepan over low heat.
-Once it is melted add the cacao, Lakanto, coconut oil, maca powder, kelp and vanilla extract and stir until it is all incorporated.
-Pour the mixture into a 9x9 square baking dish for thicker chocolate or onto a baking sheet for thin chocolate.
-Add the strawberries and goji berries to the chocolate and stir in, spreading it out evenly. Gently scatter the extra strawberries and the rose petals all over the top of the chocolate.
-Carefully place the chocolate in the freezer and let set for at least an hour
-Remove from freezer, break up to pieces and store in an air-tight container either in the fridge or freezer.
*It should be noted that I usually cook intuitively, which means that I normally don’t measure anything unless I’m following a recipe. I did measure for this so that I could share it with you but some of them aren’t exact. If you follow the measurements exactly, it will come out great but feel free to play around according to your tastes and what your body needs.
*I love Lakanto because it doesn't raise your blood sugar levels at all but still is a natural sweetener. If you don’t have Lakanto feel free to use maple syrup starting with a tablespoon and adding more according to your taste or a dash of stevia.
