Healthy A La Vodka Sauce

I love a good vodka sauce. However, I know all that cream is not the best for me so I wanted to create a healthier version. This recipe replaces the cream with cauliflower and vegan butter and I am not going to lie, it is to die for. Everyone that I make this for thinks it's the real thing and has no idea that they are eating something good for them. See for yourself and I dare you not to go back for seconds.


  • 1 head of cauliflower

  • 1 tbsp extra virgin olive oil

  • ½ yellow onion

  • 4 cloves of garlic

  • 4 tbsp vegan butter (I used miyokos)

  • Salt to taste

  • 3-4 cups marinara sauce (I use either homemade or Raos)


  • Steam cauliflower until fork tender (if you dont have a steamer you can boil it)

  • While the cauliflower is cooking, saute onion and garlic in olive oil until soft and slightly see through

  • Add cooked cauliflower, onions, garlic, salt and vegan butter to a blender and blend on high until smooth

  • Pour blended mixture into a saucepan over medium low heat, add marinara sauce and stir until well combined. Add as much red sauce as is needed to make a silky pink cream sauce.

  • Cook covered for 10 minutes

  • Spoon over the pasta of your choice and enjoy
