Healthy A La Vodka Sauce

I love a good vodka sauce. However, I know all that cream is not the best for me so I wanted to create a healthier version. This recipe replaces the cream with cauliflower and vegan butter and I am not going to lie, it is to die for. Everyone that I make this for thinks it's the real thing and has no idea that they are eating something good for them. See for yourself and I dare you not to go back for seconds.
Ingredients:
1 head of cauliflower
1 tbsp extra virgin olive oil
½ yellow onion
4 cloves of garlic
4 tbsp vegan butter (I used miyokos)
Salt to taste
3-4 cups marinara sauce (I use either homemade or Raos)
Directions:
Steam cauliflower until fork tender (if you dont have a steamer you can boil it)
While the cauliflower is cooking, saute onion and garlic in olive oil until soft and slightly see through
Add cooked cauliflower, onions, garlic, salt and vegan butter to a blender and blend on high until smooth
Pour blended mixture into a saucepan over medium low heat, add marinara sauce and stir until well combined. Add as much red sauce as is needed to make a silky pink cream sauce.
Cook covered for 10 minutes
Spoon over the pasta of your choice and enjoy
