One of my favorite breakfasts has always been fruit and greek yogurt, but dairy doesn't always work with my system so I have had to make some adjustments. Every once in a while I will get a plant based yogurt to satisfy the craving but with everything going on right now it has been hard to find a good one that is in stock. So the other day I was looking through my refrigerator and trying to figure out a way that I could substitute for yogurt. As I was staring into the abyss, I saw chia seeds and remembered chia seed pudding. Chia seed pudding was all the rage about eight years ago, but somewhere along the line I stopped making it and forgot all about it. So I whipped up a quick batch and poured it on top of a bowl of fruit. It totally did the trick and was actually more delicious and easy to make than I had remembered. Here is the recipe so you can try it out yourself.
4 tbsp chia seeds
1 tsp vanilla extract
Sprinkle of cinnamon
Place all ingredients into a jar and mix well.
Cover and leave in the refrigerator for at least two hours or over night
Spoon over fruit or eat by itself.
I ate my chia seed pudding with cut up mango, kiwi, and blueberries. I then finished it off with some pumpkin seeds. If you want it to be sweeter you can add honey but I find that it's sweet enough on its own. It is so easy that there is really no excuse not to make it. Chia seeds are also really good for your digestive system because they act as a scrub brush to clean you out and collect any debris as they pass through. Let me know what you think in the comments.
